BIRTHDAY CAKE FOR THE CAPTAIN
Hey we are back on line!!!! Been cruising the Sea of Cortes and enjoying what we always thought it would be like............little fishing villages and real people.
Thanks for the many birthday wishes for Claes!!! He was very touched! Thanks.
Here is his birthday cake..................APPLE STREUSEL CAKE….with a few White Shell variations.
FOR THE STRUESEL
1 cup brown sugar
1 cup chopped apples ( I used one over ripe banana, some left over tines pears and a small container of rhubarb stew that my daughter Tanya made before we left Comox)
1 cup of sliced nuts
¼ cup flour
1 teaspoon cinnamon
3 tablespoons butter, melted
FOR THE CAKE
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ cup butter softened
½ cup sugar
3 large eggs
½ teaspoon vanilla extract
½ cup orange juice.
FOR THE GLAZE
1/2 confectioner's sugar
2 ½ teaspoon orange juice
MAKING THE STREUSEL
Preheat the oven to 350 F Grease a tube pan (I used a round spring form pan as that is what I have)
Combine the streusel ingredients stirring in the melted butter last.
MAKING THE CAKE
Combine flour, baking powder and soda, mixing well.
Beat butter and sugar until light and fluffy. Add eggs one at a time and vanilla.
Alternately beat flour mixture and orange juice into egg mixture. Sprinkle with half of the streusel.
Spoon the rest of the batter over the streusel. Swirl batter with a knife to make a marble pattern.
Bake for 15 minutes. Remove from oven and sprinkle top with remaining streusel. Return to oven and back about 30-35 minutes. Cool completely
MAKING THE GLAZE
Combine sugar and juice mix well…..drizzle over cake…..in this case put a few candle on the cake with a Swedish flag on the one side and a Canadian flag on the other…………and serve with coffee and Kailua. Happy Birthday Captain Claes!!!!
HAPPY BELATED BIRTHDAY CLAES FROM THE INTREPID II CREW! Hope we get to share an anchorage with Whiteshell II sometime soon. We must have passed each other as you headed north and we were heading back to La Paz...If all goes well, we will leave Feb. 26th and start back up the Sea and watch out for you. Carol & Kelly
